White Bean Chili

~~~~~~6-8 servings~~~~~~

1 large onion chopped
1 large green pepper chopped
3 cloves garlic minced
1 Tbs olive oil
3 chicken breasts cooked and cubed
2 14oz. cans great northern beans, or other white beans drained and rinsed
1 14oz. can chicken broth
1 7oz. can diced green chiles
1 teaspoon cumin
6 chicken bouillon cubes or equivalent of granules
1 cup rice
2 cups water
1 cups grated cheddar cheese

1. Sauté onion, green pepper and garlic in olive oil until tender. Put all of the remaining ingredients except cheese into large soup pot, add onion and green pepper. Bring ingredients to a boil. Cover and simmer for 15 to 20 minutes or until rice is done.

2. Remove from heat and stir in cheese. Serve with tortilla chips and extra cheese for topping.
