Lil’ Monster is Growing up so FAST!

Yay Lil’ Monster is 9 months old today. And now the real fun starts. Fun for who I don’t know. But starting today we are going to start to weaning my little girl. I have some real mixed feelings about this. Yes I won’t be so hooked to her all the time but at the same time the contact with her will be so different now. Yes maybe I can start sleeping better soon. Yes I can start to hand her off now. But then again is she my last one? Does this mean that I am done with this kind of closeness. This just makes it all different.

I am really excited that yesterday she did three things that she has never done before 1) she fell asleep without crying and without nursing first 2) I was able to transfer her from her car seat to her crib without her waking up and 3) she ate about a half of a jar of cereal really easy.

She is getting so big too. She sits in her walker now and pushes that thing every where. In the kitchen she chases me around the island and outside she strollers down the driveway. She is even crawling all over the place now albeit it is the army man type of crawling but she is doing it.

100_2987And boy is she ever a TV watcher. My girls watch only movies but still she sure watches them.

I really am treasuring these times although sometimes I wish these time would hurry up and pass. I think what makes me feel that way is when these milestones start they always start off hard at first. But then of course after some time they always become easier or more manageable. I guess it comes back to why can't everything in life just be easy. But then again where would the fun in that be?

But for now "Yeah my little girl is 9 months old!"

Did you ever wonder…………………

THE DOT...... FINALLY, SOMEONE HAS CLEARED THIS UP.

  For centuries,  Hindu women  have worn a dot on their  foreheads.  Most of us have naively  thought this was connected with tradition or religion, but the Indian Embassy in Ottawa has  recently revealed the true story.   When a Hindu woman gets  married,  she brings a dowry into the union.  On her wedding night, the  husband  scratches off the dot to see whether he has won a convenience  store, a gas  station, a donut shop, a taxi cab or a motel in the United  States.  If nothing is there, he must remain in India  to answer telephones and provide us with technical advice.

Two Women in Heaven

1st woman: Hi! My name is Maria.

2nd woman: Hi! I'm Sylvia. How'd you die?

1st woman: I froze to death.

2nd woman: How horrible!

1st woman: It wasn't so bad. After I quit shaking from the cold, I began to get warm & sleepy, and finally died a peaceful death. What about you?

2nd woman: I died of a massive heart attack. I suspected that my husband was cheating, so I came home early to catch him in the act. But instead, I found him all by himself in the den watching TV.

1st woman: So, what happened?

2nd woman: I was so sure there was another woman there somewhere that I started running all over the house looking. I ran up into the attic and searched, and down into the basement. Then I went through every closet and checked under all the beds. I kept this up until I had looked everywhere, and finally I became so exhausted that I just keeled over with a heart attack and died.

1st woman: Too bad you didn't look in the freezer---we'd both still be alive.

Here’s the Kicker

All right I was just looking at my menu thinking I need to think about dinner. When I realized I had a lot of great stuff on the list and NO FOOD in the house that will work with the menu. Humm. I think I did something wrong. Like I either forgot to go to the store or I forgot to make a menu of food that I actually have. I know what a concept. So now to figure out dinner and then conquer the menu realistically.

Egg Chili Bake

            ~~~~~~ 8 servings ~~~~~~

   1/2  tsp Salt
   3      Eggs
   1      cup Bisquick
   1      can (7 oz) Ortega green chilies ; chopped
   3      cups Milk
   1      lb Cheddar cheese or Jack or mixed ; grated

1. Combine all ingredients.  Mix well.  Pour into slightly greased baking dish 9 X 12.  Bake at 325° for 1 hour.

Molasses Barbacued Beans

     ~~~~~~ 8 servings ~~~~~~

   2      lbs     navy or small white beans, soaked overnight
   2      cups   white onions, chopped
   2      cups   red onions, chopped 
  1/4    cup    garlic, minced 
  1/2    cup    red wine vinegar 
  1 1/2  Tbs   Dijon mustard 
  1 1/4  Tbs   soy sauce 
  2       cups   dark brown sugar 
  1/4    cup     Worcestershire sauce 
  1/4    cup     ketchup 
  3       Tbs     dark chili powder 
  2                 canned chipotle chilies, chopped (along -- with some of the chipotle sauce; to taste) 
  1       lb       canned plum tomatoes, crushed by hand or chopped 
  1/2   cup      sorghum molasses 
                     Honey, to taste 
                     Salt, to taste 
                     Freshly ground black pepper, to taste Molasses beans

1. Cook white beans according to directions on package until just slightly tender.

2. One hour before beans are done cooking, combine the remaining ingredients in a large saucepan or Dutch oven and simmer for 45 minutes. (It is important to cook the beans and make the sauce at the same time so that the hot beans will absorb the hot sauce.) When beans are slightly tender, drain and add to the sauce. Season to taste with honey, salt and pepper. Cook
beans in the sauce, uncovered, over medium low to low heat until beans are fully tender and have fully absorbed the flavor, about  30-45 minutes, stirring occasionally.

This recipe is from BigOven.  I have not had a chance to try it yet hopefully soon.

Comments: A family favorite that is really good and very easy to make. This barbecued bean recipe makes a terrific side dish for any picnic or barbecue and draws raves from everyone. It's a great summer-time dish that is prepared on the stove-top (doesn't heat-up the house with a long oven cooking time). I think these beans taste even better after a day or two, so they are perfect for those of us who love to get things done in advance!

Creamy Chicken Enchiladas

~~~~~~ 6 servings ~~~~~~

2 1/2 cup skinless boneless chicken breasts, cut 1 1/2" pieces
1 can condensed cream of chicken soup - (10 3/4 oz)
1 cup Sour cream
3 cups shredded colby-jack cheese
2 can (4 oz) Ortega Diced Green Chiles -, 4 oz can

1. Mix cooked chicken, soup, sour cream, 1 1/2 cup cheese and chilies.

2. Spoon chicken mixture in each tortilla. Place in 13X9 inch dish, greased.

3. Bake at 350 for 25 minutes.

4. Serve with sour cream, salsa and guacamole.

----- Variation -----

1. You can put some cheese and salsa on top of the enchiladas before cooking them.

We usually just pour salsa over the top and some cheese and put sour cream and guacamole on the table for you to add your own.

Chicken Enchiladas

~~~~~~ 6 servings ~~~~~~

4 chicken breasts (cooked and cubed)
1 large onion, chopped
2 cans Ortega green chilis chopped
1 lb cheddar cheese, grated
2 cans cream of chicken soup
1 can chicken broth
2 cup sour cream
8 flour tortillas

1. Combine chicken, onions, and chilis, cheese (keep some cheese to sprinkle on top). Fill tortillas, roll and place side by side in 9x13 pan.

2. Mix soup, broth and sour cream together and pour over tortillas. Sprinkle with remaining cheese –Cook for 25-30 minutes until bubbly.

Fajita Skillet Bake

~~~~~~ 6 servings ~~~~~~

1 pkg Rice a Roni Spanish Rice
3/4 pound boneless, skinless chicken cubed small (I season mine with paprika, Italian seasoning and granulated garlic or with just taco seasoning.)
1 jar salsa

3/4 jar water

1/2 cup shredded cheese

1. In a large skillet over medium heat, sauté rice-vermicelli mix with 2 tbsp. margarine or butter until vermicelli is golden brown stirring frequently.

2. Slowly stir in water, seasonings and salsa. Stir in chicken.

3. Cover: reduce heat to low simmer 15 to 20 minutes or until rice is tender.

4. Serve with cheese and tortillas, sour cream and guacamole optional.

Chickens ~ the good and the bad.

I loved always having fresh eggs and a great variety of eggs. The green ones were the best. The hen to the right was one of our oldest and she always laid a dark green egg and had great chicks too. All right so that is one of the good parts of our chickens that I miss.

The part that I don’t miss is the roosters crowing and waking us up or crowing at all hours of the day. Another part I don’t miss is having to go out and feed them. We had too many that it would take forever.

But now that we are talking about food storage and what we need to do to get our families prepared we are thinking about maybe getting chickens again some time if we ever get another house with land. The other part that I look forward to if we get chickens again is that now we have helpers to help take care of them.

86-year Old Lady's Letter to Bank

This letter is something that was sent to me in my e-mail that I just had to put here.  I thought it was great and an awesome representation of how I feel at times.

Shown below, is an actual letter that was sent to a bank by an 86 year old woman. The bank manager thought it amusing enough to have it published in the New York Times.

Dear Sir:

I am writing to thank you for bouncing my check with which I endeavored to pay my plumber last month. 

By my calculations, three nanoseconds must have elapsed between his presenting the check and the arrival in my account of the funds needed to  honor it. I refer, of course, to the automatic monthly deposit of  my entire pension, an arrangement which, I admit, has been in place for only eight  years. You are to be commended for seizing that brief window of opportunity, and also for debiting my account $30 by way of penalty for  the inconvenience caused to your bank. My thankfulness springs from the manner in which this incident has  caused me to rethink my errant financial ways.

I noticed that whereas I personally answer your telephone calls and letters, --- when I try to contact you, I am confronted by the
impersonal, overcharging, pre-recorded, faceless entity which your bank has become.

From now on, I, like you, choose only to deal with a flesh-and-blood person. My mortgage and loan repayments will therefore and hereafter no  longer be automatic, but will arrive at your bank, by check,addressed personally and confidentially to an employee at your bank whom you must  nominate.

Be aware that it is an offense under the Postal Act for any other person to open such an envelope. Please find attached an Application Contact which I require your chosen employee to complete. I am sorry it runs to eight pages, but in order that I know as much  about him or her as your bank knows about me, there is no alternative. Please note that all copies of his or her medical history must be countersigned by a Notary Public, and the mandatory details of his/her financial situation (income, debts, assets and liabilities) must be  accompanied by documented proof. In due course, at MY convenience, I will issue your employee with a PIN number which he/she must quote in dealings with me. I regret that it cannot be shorter than 28 digits but, again, I have modeled it on the number of button presses required of me to access  my account balance on your phone bank service. As they say, imitation is the sincerest form of flattery.

Let me level the playing field even further.

When you call me, press buttons as follows:

IMMEDIATELY AFTER DIALING, PRESS THE STAR (*) BUTTON FOR ENGLISH

#1. To make an appointment to see me
#2. To query a missing payment.
#3. To transfer the call to my living room in case I am there.

Regrettably, but again following your example, I must also levy an establishment fee to cover the setting up of this new arrangement. May I  wish you a happy, if ever so slightly less prosperous New Year?

Another Update

 

I haven’t been on here much lately.  Things have been really crazy. 

Some time around Thanksgiving or Christmas I started having pain in my right hand.  Why it had to be that hand I don’t know.  But of 017 (2)course this makes the pain so much worse.  But any ways,  for awhile there the pain was so incredible unbearable that couldn’t do anything.  It hurt to write, to pick up Krystal and I couldn’t even open the mayo jar.  I still have problems with the mayo jar.   But it was so bad that I was taking Aleeve, Tylenol, and seeing the Chiropractor.  And still nothing helped.  Finally I made an appointment with the hand doctor here in town.  His nurses assistant finally told me that I have tendonitis in my hand.  They gave me a Cortisone shot right then.  But that IS NOT WHAT I WANTED TO HEAR!!!!  I wanted to be told I BROKE MY HAND.  I figured that would heal and go away and my hand would be back to normal.   

For the most part we have been doing good here health wise recently until this last weekend when Papa Bear came down with the FLU.  Let’s just say that made this weekend really suck.  But he became healthy just in time to go back to work this morning.  That’s just the way it goes some times.

And now for a happy update, my Lil’ Monster is now scooting around.  And she rocks on her knees like she is going to crawl.  Only a matter of time now.
